Being the "new kid on the block", most forum applications don't have a field for Google Talk, and it's not very widely used. Also, as far as I know, there isn't really a way to detect the online status of a Google Talk user from a remote site, or to send them a message from a link on a website (especially considering that any Jabber client can connect to their network), which are two features common to every other IM client that make the profile fields for them actually worthwhile and useful.

What Softpaw said. I have nothing against Google Talk, but it is not very good about letting itself be integrated into websites like AIM, YIM, and the other protocols I have listed under user names.
That being said, there's no reason why I can't create a profile field for Google Talk, and just did!
@Kitsune fan: I added your Google Talk username to your profile for you as my way of saying "Thanks!"
I can't believe I forgot to include Google Talk in my list of chat protocols.
