I believe the hotels relaxed the age to 18 IIRC.

Usually hotels require that you be 21 years of age or more to book a hotel. We have arrangements with our official hotels (the Westin and the Doubletree, for 2009) to relax that age to 18. If you attempt to book at any other hotel, the age requirement will be 21.

When hotel booking is open this year, due to the intense demand, the hotel will require a non-refundable deposit for the room equivalent to one night's cost at the time of booking.

"a non-refundable deposit for the room equivalent to one night's cost at the time of booking"

So if we book, and go through with it, do we get that deposit back, or does it act as a down payment on the overall time we will actually be staying in the room?

It acts as a down payment and will be applied to the total cost of the room.
